Fall on the Homestead...
Good thinking, Angie!
I haven't eaten quail in years, should get some for the holidays.
I don't think I have ever eaten quail.
Deer are so plentiful here they are a nuisance (sp?). Everybody is killing them now that the season is open. A friend brought us a button buck yesterday. I skinned and boned it out today. The meat is in the fridge chilling. Some we will fry and the rest we will grind. Been toying with the idea of making some sausage using the pork fat I still have in the fridge from our pigs. That way DH could eat it as I could limit the salt and it would not be processed so it would not hurt his kidneys. I would just make patties as I don't have any stuffer.
Angie, so good to have you back. It has been too long.
Good to see you again Angie.
I have raised quail here for release. I plan to incubate another couple of gross eggs this coming year. They're fun.
We finally got all the tea for the winter dried and packaged. We have roseheps, mulberry leaves, mint, cornsilk, comfrey, red clover flowers, alfalfa, sweet woodruff, and orange and lemon peel. cinnamon sticks, and cracked nutmegs and cloves are always about the place.
We're doing the last of the butchering this week; the geese and ducks. The hardest of all of them. I studied up on how the Chinese do ducks with the melted paraffin and plan to try that. tomorrow. Basicly you melt a couple huge blocks of paraffin wax and dip the bird in it. then hang the carcass up to cool and drain. When the wax hardens you peel it off and the feathers come with it. I'll let you know how it works.
We're bottling the wine this week, too. woot woot!!!!
That is the way cajun duck hunters do it. They keep a big pot of wax and an outdoor burner on the dock. They tie a string on the duck's legs, dip them in the melted wax and then toss them in the water to cool. Works great.
Didn't get to the birds yet so they got a reprieve till after thanksgiving.
Caj, You should feed your husband cornsilk tea everyday. It is one of the best things you do for your kidneys. I had cancer in my left kidney and lost it back in 02. I have been drinking cornsilk tea ever since an Amish lady told me about it. Being diabetic I have to get bloodwork done about 3 times a year, and my kidney function has actually improved by over 5% in the last 3 years. This summer save and dry the silk off of any sweet corn you have. It should be dried in the shade, or frozen green and used without drying. I add a couple of bruised stevia leaves to for sweetness. I hope it works for him.

For those of you interested in chickens, the Poultry and Livestock forum here is now open to all again. Hope to see you there!
The ducks are starting to lay again, so I'll have eggs for the winter and ducklings to sell at Easter.
Got the smallest turkey out of the freezer to thaw. Debbie and I are going to roast it tomorrow and do mashed potatoes with turnips (tatties and neeps) and giblet gravy. Along with some noodles, corn, sweet potatoe pie, and my homemade rolls. turkey hash when we get back from Ky Saturday. (we have a wedding to go to Friday)
I hope and pray that the rest of you have a happy, safe, and peaceful Thanksgiving.
Let's start a new thread, since another season starts this Month
