Usually resides in soil. Surfaces when plant is watered.
Somehow 'water-resistant', goes into defence mode and shrinks up when I shoot it with the water spray.

This appears to be a very young sowbug, a terrestrial crustacean in the order Isopoda. These basically are scavengers on decomposing organic matter; some species occasionally can cause damage to very tender young plants.
