Evergreens, What do you reccommend?

I am trying to change my yard over to evergreens. Want to tear out my Apricot and maybe the Purple Robe locust and plant Mundel Pines, they grow 6 feet a year here. I have boxwoods and some Ivy. Jasmine vine. I have a trellis of Wisteria I would like to see go and plant a nice evergreen fragrant vine, I've heard night Jasmine is great. Any flowering bushes you could suggest. I also have heavenly bamboo and need suggestions for around a waterfall. Pond turned swimming hole with chlorine, but wouldn't get on plants. Temps can be 18-110. High Desert
