I have a few grafted Japanese maples(viridis, arakawa, and tamukeyama) and I'd like to air layer the graft off. They are all less than 3 years old and very healthy. Is there any reason not to do this? I am familiar with layering trees and plants but not above a graft.

I thought they grafted these because some are too weak to grow well on their own roots. I could be wrong, but I know I read that some place.
I think it's also because they don't root well from cuttings, and for someone who's commercially propagating plants grafting is faster than air layering. Might be worth posting in the Japanese Maple forum--there are some people over there who are very knowledgeable about JM's and would be able to answer your question.
