Couldn't find him in my field guide. He was on the Louisiana/ Texas border near the coast.

This is a nymph of an eastern lubber grasshopper, Romalea microptera (Orthoptera: Acrididae); the adults look quite different (see http://tinyurl.com/2ebfx5l), which may help explain why you couldn't find it in your field guide.
These grasshoppers are VERY prolific here where I live, and from what I've seen they have no natural predators. Nothing eats these things, but THEY have a huge appetite, and will eat anything. They're very hard to eradicate.
