I bought a red rocket maple, and it says on the tag that it gets 8 wide and 35 ft tall.
Bogus or not? Sounds too good to be true. Here is a link I found on it.

Take a visit to the US National Arboretum website, and look at their New Introductions information. The USNA introduced Acer rubrum 'Red Rocket', and I'd trust their description (they aren't selling the plant). Your tag sounds about right.

NOTE: this is a new enough introduction that most experience is going to be with arboreta or botanical gardens where the plant would have been trialed prior to release to commercial growers.
Assuming growth rate typical of Red Maple, it'll likely have a mature height in the region of 20-25 metres. The sizes cited on nursery labels are typically height at 10 (sometimes 20) years old, not maturity.

well I didn't think maples ever 'matured', they just keep growing, don't they?

They do just keep growing, yes, but they do slow down height growth a lot typically at around 50-100 years old. A young maple will grow an extra 5m taller from 5m to 10m in just ten years or so, but an old one won't grow an extra 5m taller from 25m to 30m in anything like the same time (if it ever does at all!). It puts nearly all its energy into flower and seed production instead.
