I bought some Anaheim mild Green Chili peppers from the store but was told that if I saved them to plant they would not be ripe and would not grow and that I should buy seeds instead, what do you think I should do?

I don't know, but I was surprised to hear about GREEN Anaheim chili peppers. I thought they were always red. Nope!
I saved seeds from a 1/2 pound bag of mostly-dried "California" dark red peppers from a fruit stand. I asked what type they were, and he looked at the bag that had "CA" writen in Maigc Marker, and told me "California".
But they look like and taste like (red) Anaheim.
I happen to have started a germination test yesterday! Someone in DG mentioned that they tried to sprout chili pepper seeds froma spice jar and they wouldn't sprout - perhaps over-dried.
I also saved some Thai red chili pepper seeds, for squirrel deterence.
