There was a mole moving around out in my garden (I could see the plants shaking)....twice I saw these things come up out of the ground to escape the mole. Any idea what this is? It was about two inches long.

This is a larva of a beetle in the family Scarabaeidae; likely in the genus Cotinis (green June beetles/fig eaters, etc.) - see http://tinyurl.com/y9v6jqk for an example.
