Thought I would take a break before I really got into the canning, freezing I have planned for today. DD and I went to the Asian market yesterday and I want to tell you ..I LOVE THAT STORE..I got 12 green peppers the size of softballs for $3.16, 5# tomatoes for $3.00, 3# jalapenos for $1.50, 3# pickling cucumbers for $1.50, some onions, garlic, 3 pkg. panko and 2 pomegranates and the total bill was $17.38. I just cant garden that cheap which is why I think I will forego the yearly planting, weeding, mulching, watering, swearing...and just buy my produce at the Asian store and save a lot of time and money.
So now I am in the process of cleaning the peppers, cooking up some meat and rice and will make several stuffed green peppers....which is what we will be having for dinner tonight, also will freeze the rest for later dinners. They freeze so well, all I have to do is put them into a baking dish with spaghetti sauce and pop them in the oven for a couple hours...instant dinner.
I also have the cucumbers soaking in a cleaning solution and will pickle them, and I also want to make some salsa with the tomatoes, jalapenos and chilies..onions and garlic. Thats always a hit around here, especially with my DD, she would add salsa to everything she cooks, I think...if possible. I like to add it to chili, baked beans and meat loaf. Spices it up a little.
Thanks, Tammy..for that easy peasey quiche recipe. I definately will try it soon. I have always been a little intimidated by trying to make one, but yours sounds simple enough even for me..ha!
Tommy sure looks like he has a hard life around here, doesnt he..???
