After reading Sharron's article about hominy today just had to share one of our favorite recipes. Even your twelve year old could make it.

I usually double the recipe.

4-6 servings
1 lb. ground meat...browned and drained
1 or 2 large cans diced tomatos
1 15 oz can Ranch Style Beans...undrained
1 15 oz can Ranch Style Beans w/Jalapenos...undrained
1 lrg can whole kernel corn...undrained
1 lrg can hominy...undrained
1 pkg Taco Seasoning

We like to add cilantro, salsa and cheese over the top after it has been ladled into a bowl.

Serve with Tortilla chips, soft tortillas, crackers...whatever

It is very versatile and you can add or subtract ingredients. First time we ever ate it was at a family reunion cooked exactly to the recipe....increased to feed 50. It takes less than 20 minutes and tastes like it took all day. Very frugal to feed a crowd. Shared it with a teacher friend and it has made the rounds all over the community.
