How do I save the seeds from lettuce that has bolted and gone to seed? And how do I know when the time is right?

I pick the whole heads off when they get the white fluffy look and let them dry in an open bag. The little black bits at the end of the parachute are the seeds. I try to get them just before they are so dry that the wind disperses them.
(not always black)
