Debi it depends on the plant. It will be mostly tender annuals that are affected by frost. If frost kills flowers and undeveloped seed pods they won't be able to mature. The seeds that were already ripe on the plant will still be Ok to collect. Many of my perennnial plants aren't ready to harvest until after frost has come. There's a lot of hardy annuals that will last well after a frost too.
