A five-gallon pot per plant should be ample. You can put several plants in a five-gallon container if you wish. I find that my Datura Stramonium var. Tatula grows long and lanky unless I crowd it's roots, and then it grows more compact. The double/triple Datura Metel's are annuals and die completely, but Datura Wrightii and Datura Inoxia, both single white blooms, do come back from the tuberous root in the spring.

This picture sort of shows the container that I had one Datura in.

Edited to add: this five-gallon container holds two Datura Metel plants.
