...I went through the same dilemma when I got my first EE's just last month.
There are 2 types....bulb/tuber -or- runner type. So that should easy enough to figure out. If you have a fleshy bulb like root they can be stored as a bulb. Runner type (Imperial Taro ) is what I have and they are sharing a pot near a window for the winter because they can not be stored like a bulb.
....Storing your bulbs dry will of course shorten the growing season for them.
