I grow a few varieties, the typical domestica, hybrid 'Bright White', Jamacian Red, Zedoaria and one with orange rhizomes from Vietnam. My doestica and Bright White are blooming now but the others are all spring bloomers.
I haven't cooked with the zedoaria but I'll have to try it. I'll pass on the word that you have some for trade (not everyone who comes here has been on DG) I tell them about it if they haven't visited here before.
