Starting in water is something I've had little luck with, although I know some people swear by it (and I think they add soil gradually to the water so the "water roots" can adjust). Some people root in trays of perlite.

Here's my favorite method of starting leaves.... clear plastic salad containers, with holes in the top for ventilation and holes in the bottom for drainage.
