I would double the water, if you give it an inch a week, give it two inches. Try and let the soil dry some between waterings, that shouldn't be too hard to do in the desert. Also surround the old base with a layer of composted cow manure about 2" deep X 2' out from the base (be generous) and add a fence about 3' tall. Bananas are a type of grass, it should recover, slowly.
