Specific gravity is generally medium and baking and boiling qualities are good to excellent. Sugar content of tubers is generally too high for processing. Hollow heart may be a problem. Centennial Russet has moderate tolerance to Verticillium wilt, early blight, rhizoctonia and Fusarium dry rot, but is susceptible to common scab and leaf roll. "
