Winter Squash 'Redondo de Tronco'

The squash variety 'Redondo de Tronco' is neither a "summe...Read Morer squash" nor, more importantly, is it Cucurbita pepo. Although it is most frequently raised and harvested as a "summer squash", it is really a "winter squash' and, in fact, is Cucurbita maxima. This includes the squash sold under this name by Harris Maran which is mentioned by farmerdill in this entry. My wife's family has grown and eaten this squash in Argentina for about 50 years. The family never grows them out but eats them as a 'summer squash', usually stuffed with ground meat, rice, cheese and herbs, and then roasted.
