Ensalada De Nopales is a favorite of ours.

1 (15 oz) jar nopalitos ½ medium onion, thinly sliced
I cucumber peeled and cut into small pieces
2-3 large roma tomatoes, thinly sliced
Cilantro, finely chopped
1-2 Avacados cut into small pieces
Jalapenos or serranos chopped fine
queso fresco, crumbled
fresh squuezed lemon juice to taste if you like

Open jar of nopalitos, place in a colander and rinse thoroughly with cold water. Drain and place in bowl and mix in onion, tomatoes, cucumbers, cilantro chiles and some of the avacado together Top with crumbled queso fresco. Serve immediately or keep in the refrigerator until ready to serve

This is such a versatile salad and can be changed to your taste. If we do not have cucumbers I leave them out, my husband is not fond of cilantro so I just add a little but we love avacados and chiles so I add more of those.

Also we often serve this with corn chips and use it as more of a dip.
