I love muffins. But I don't make them that often for a few reasons. Number one is that I don't really have a big selection of tried and true recipes. Number two is the time it takes me to assemble the recipes. (I'm a slow cook.) Number three is this: I'm trying very hard to cut down on the unhealthy ingredients that muffins are usually so full of - sugar and oil, primarily.
This morning, I reverted to a recipe I've made before just because it tastes great: Banana Chocolate Nut Muffins. Mmmmmm.... I did use whole wheat flour, and applesauce to replace oil; however I also used whole eggs and I'm sure the cup full of chocolate chunks (they were dark) and the cup of chopped walnuts made up for the calories.
What I'd love to have is a basic healthy recipe that can be 'doctored' any number of ways for flavor and nutrition. Anybody else been on this quest?
