These are from last year. Which is not the problem. They have just gone wild sprouting and I was wondering if I can still plant them? The longest sprouts are 8-10 inches and they are Red Pontiacs with maybe a Red Norland mixed in. I would like to plant them if possible in the next couple of days.

I don't see why not. You can always try it and pull them out if they don't grow.
I'd say plant them as soon as possible!
Yes they should still grow. I have dug up potatoes and left a few roots behind just to have them come up again.
