have garlic left over from harvest ?
here's a idea- break off the cloves, drop into boiling water for 30 seconds, then into cold water for couple minutes.
drain, pat dry, at this point you can peel the cloves easily.
place on a cookie sheet, & freeze.
after frozen bag up in small baggies, & place back in freezer for use later.
when you need garlic, take out a clove, let it thaw a little, & put through a garlic press.
it might be a little soft, but it will not lose any flavor.
