I've tried several in the past month or so but I dunno none of them have really wowed me at this point. This one came in first place but still lacks something.
1 lb dried navy beans
1 teaspoon salt, plus more to taste
4 slices of bacon, chopped
1 medium onion, chopped
2 medium bell peppers, chopped (red and green)
1 cup Kansas style BBQ sauce
1 cup apple cider
1/4 cup molasses
1/4 cup yellow mustard
1 to 2 tablespoons cider vinegar
Soak the beans overnight
In a large heavy saucepan, combine the beans with 6 cups of water. Bring the beans to a boil over high heat and then reduce to simmer. Cook slowly, stirring up from the bottom occasionally. Cook for at least 2 to 3 hours, stir in the salt after the beans have softened. Add more water if needed.
Preheat the oven to 325
Fry bacon and set aside to drain, saute onions and peppers in bacon drippings, drain and mix with beans
Mix Kansas style BBQ sauce, apple cider, cup molasses, yellow mustard and cider vinegar and fold into the bean/onion mixture. bake covered for about an hour and uncover and back for an additional 15-30 minutes.
