Great fun today guys and great food. There were people wanting recipes for all the good food, myself included. Please post your recipes here if you brought something you made. That includes EVERYTHING, salads, desserts, side dishes, meats and sauces.
You all are a great bunch. Now get some rest before you start planting all your goodies.

Soft drinks and water.
Place drinks in refridge the night before the event to cool. Get ice in the a.m. and add to 2 ice chest filled with drinks. Try to seperate into the different flavors. Check often to see that all stay cold. Offer to guest.
Easy and works every time.

I have one too! Cups and plates... go to store, buy them. Put them in your car. Start the trip, turn around, come home. Hope everyone doesn't have to eat off their napkins. :)

My mom had a request for this so here it is.
Rice Salad
1 Can Black Beans, drained and rinsed
1 1/2 Cups cooked long grain rice
1 1/2 Cups fresh chopped tomatoes (I scrape out seeds and juice)
4 Green onions chopped
1 rib celery chopped
1/2 Cup chopped fresh (uncooked) Baby Spinach
1/2 Cup Italian dressing
1 Cup ( 4 oz ) feta cheese
In a large bowl, combine the beans, rice, tomatoes, onions, celry and spinach. Drizzle with dressing and toss. Add feta cheese.

That rice salad was wonderful. I'm so glad you posted the recipes. Come on folks, please post some more. There was some awful good eating that I would really like the recipe for. Here's the one I brought.
FESTIVE PINEAPPLE-CRANBERRY SALAD
1 can (20 oz) crushed pineapple, undrained
2 packages JELL-O raspberry flavor gelatin (4-serving size each)
1 can (16 oz) whole berry cranberry sauce
1 apple, chopped
2/3 cup walnuts, chopped
Drain pineapple, reserving juice. Add enough cold water to juice to measure 3 cups; pour into saucepan. Bring to boil; remove from heat.
Add dry gelatin mixes; stir 2 minutes. Stir in cranberry sauce. Pour into large bowl.
Refrigerate 1 1/2 hours or until slightly thickened. Stir in pineapple, apples and walnuts.
Refrigerate 4 hours or until firm.

The brownies that Jim (KARLAE) brought to the CSRU were not exactly what I brought to Jacksonville. My DH brought home four Symphony candy bars, but they were the small ones. I chopped them and spead them and a layer of chocolate chips between the layers of brownie mix. Jim's version that I am posting here is super yummy, just about the best chocolate yummy I have ever had.
Double Brownie Chocolate Stuff
2 Boxes Double Chocolate Brownie Mix
3 Symphony candy bars ( I think they are 8oz, about 4"x8" +/- )
1 Cup chopped nuts if desired
Mix 1 box of brownie mix per directions and place into 9x13 pan. Lay 3 Symphony candy bars on top next to each other and spaced evenly in pan. If you want to put nuts in, spread them across the candy bars now. Mix 2nd box of brownie mix and spread over candy bars. Bake at 350 deg. until brownie mix is firm ( you are making a double batch of brownies, so it will probably take longer than the box directions specify ). Let brownies cool and cut into desired sized pieces.

Thanks AJ. I copied that recipe so I'll go back and make that note about the spinach. Patrob, I am definitely going to make that brownie recipe. If it tastes as good as the brownies you brought to Jacksonville, it's a keeper. Those were wonderful, moist brownies. Another dessert I tried that I really liked was similar to a strawberry shortcake. I wish whoever made that would post the recipe. There were several pea salads that were good also. In fact, all the salads I tried were good. I wish more people would post their recipes!!
I second that on the salads all being very good - and I would love to see more recipes too!

LOL Pattie! That's Jim's recipe, and his idea to let them cool. Right out of the oven with a scoop of Blue Bell Country Vanilla on top sounds great to me. The brownies I took to Jacksonville were made with much less candy and were not nearly as gooey and wonderful as Jim's, but they disappeared, thank goodness. The drive home was way too long to have left-over brownies in the vehicle. :>)
redrahde, The "Strawberry Shortcake In a Bowl" was probably mine. I don't have an actual recipe, but here's how I made it:
Slice 2-1 lb. containers of fresh strawberries into a bowl, and fold one container (I think it's 16 oz.) of strawberry glaze(sugar-free is what I use). You will find this product in the Produce Dept. It's in clear plastic containers similar to cottage cheese cartons.
Slice an angel food cake approximately 1-1/2 to 2 inches thick and put one layer in the bottom of a glass bowl. Spread half the strawberry mixture evenly over the cake slices. Spread half an 8-oz. container of Cool Whip (I use Wal-Mart's light version). Repeat layers, ending with Cool Whip on top. Refrigerate several hours or overnight. If any leftovers, keep refrigerated.
