Green Tomato Sandwich Spread

Boonies, SD(Zone 4b)

Someone asked me for the recipe on another thread so I will post it here also. This is an old recipe that DH family always made.
1/2 gallon ground green tomatoes
1/2 pint ground green peppers
1/2 pint ground red peppers or jar pimientos
1/2 pint ground onions
5 Tblsp salt
(If you have a food processor, you can use the 'hash brown blade' as I call it)
Mix together and set overnight in the fridge. Drain and rinse lightly the next day. In large kettle, add 1/4 tsp. celery seed, 1 pint vinegar, 1 pint sugar to your ground veggies. Boil 25 minutes. Cool to room temp and drain lightly and add 1 quart real mayonnaise and 1/2 cup prepared mustard. Put in jars and keep in fridge.
My kids like to eat it on bread like peanut butter. It's very good on sandwiches. It also keeps for a long time.
