I planted saffron last Nov. and they grew well through the winter. Now all of a sudden the tops died.
Is this normal?

Yes, it's normal. The leaves will go away, but be patient. Come fall, the flower will bloom and you can collect the three stigmas.
Yep, dormant all summer long! They do prefer dry conditions when dormant, so don't put them in a bed that gets a lot of summer irrigation.
Come to think of it, I didn't see mine flower last fall... maybe the voles finished them off. :-(
I guess in the fall we will be asking what to do with them once they flower. I don't remember mine coming up last fall either! I do remember the greenery coming up last spring and I don't have voles.. or anything else that would eat them.. maybe it was too dry.. it was for almost everything else.
Mostly, I just enjoy them... I do like to pick a few fresh stamens and add them to rice or to a cup of warm milk with a little honey.
Mine came up and then something ate all the tops down to 1" nubs. I blamed the cats until I saw rabbit poop on one of my baby hardy geraniums (sorry Pat and Buddy!). Then the nubs disappeared too. I hope they had leaves long enough to make blooms this fall.
