I bought some today and since they are fresh can I grow plants from them or would I use the dried
kind of seed? I really enjoyed eating them fresh a totally different taste from the dried one, even though it is a little work getting them out of the pod. Thanks

You can certainly give it a shot.
But even if you get them going, chances are you won't get much yield. They have particular cultural needs - high temperatures and lots of water, according to wikipedia there. I suspect that's why I never see them available in US seed catalogs. They're more suited to other climates.
Where were the fresh ones that you have grown?
