Ham & Green Beans - No Flavor?

I have been cooking my ham bones down in the crock pot for many years. The last 2 times I have used the usual ham bone with ham on it for the soup and after cooking the ham bone down in the crock all night, the broth just tastes greasy? Anyone have a fix for this or know why?
