anybody know of a reason why i shouldn't put herbs in 15g containers with fig trees in? [granted the herbs need generally less water]

It's not a good idea to put things with different watering requirements in the same container since you can't possibly keep both of them happy at the same time. But if you can find some herbs that have similar water requirements to your fig then you could give it a try.
