I'm going to get some library books on landscaping but would be particularly interested in any resources you may have used in the Gulf coast area as far as planting goes.....

You may have heard of this, but if not, it is a good book: "Plants for Houston and the Gulf Coast" by Howard Garrett. I bought it at Borders about a year ago (it's a paperback.) Maybe it is available at your local library.

My favorite is "Houston Garden Book" by Better Homes & Gardens. I like the way it's laid out and it has lots of pics. There's sections on trees, shrubs, bulbs, annuals, perennials, vegetables, and fruit. If I only had one garden book, this would be it.
I also got that one. :)
The Southern Living Garden Book is my first reference for southern plants.

I recently moved to the Houston area and purchased several books but my favorite was "A GARDEN BOOK FOR HOUSTON AND THE TEXAS GULF COAST" by the River Oaks Garden Club. First printed in 1929. I have the latest printing 1989. One section is laid out month by month. Another section is by color. Also sections on bulbs, shrubs, lawn, roses, vines, ferns, camellias, ground covers and more. About 400 pages. I got it from ebay.
