I have broccoli and brussel sprout transplants out and little lettuce seedlings just poking their heads up, and we have snow headed this way. Should I put a sheet or something over them or will they survive snow cover?

I recommend that you cover them if you can. There's no telling how much snow you'll be getting, and it's better to be safe than sorry.
But if the plants do bite the dust, it's probably not to late for you to replant.
Snow should not hurt them, They will stand temps down to 23-24 dgrees F.
