Greens for Soup

Tempe, AZ(Zone 9a)

I have experimented with so many greens that are too bitter for me, that now I want to hear from the experts. What do you like to use for your soup? I do like baby bok choy but would like to find something different now.

I have used spinach. I love spinach but it seems to leave a "flat?" flavor when cooked in soup.

Endive and Kale are bitter to me. I've sauteed swiss chard and love it but haven't tried it in soup. Any suggestions for a nice dark green leaf that does not have a bitter taste would be appreciated.
