Sorry I can't help with your specific request but wanted to say you'll enjoy enjoy the scenery of your trip, even if you don't stop anywhere.
I haven't been there, but the Antique Rose Emporium has a garden in San Antonio. Looks like a worthwhile visit by what's on their website.

There's the herb farm in F'burg, too! That's a fun place to go.
When will you be here? If you come during bluebonnet season, which won't be much this year due to the drought, you can always go on the Willow City loop outside of F'burg.

In Kerrville, there's a wildflower nature preserve. Almost forgot about that!
