1 cup sugar
1/2 cup light corn syrup
1 1/2 cup dry roasted peanuts (unsalted)
1/2 teaspoon vanilla
1 tablespoon butter
1 teaspoon baking soda
Place sugar, corn syrup and peanuts in a glass microwaveable bowl.
Mix together and then cook for 6. 5 minutes. Mixture will be bubbly. Remove from microwave (bowl will be hot!) add butter, vanilla and stir. Place back in microwave for another 2.5 minutes. Remove and sprinkle baking soda on top of mixture. Immediately mix (well) Baking soda causes the mixture to froth up. Quckly pour mixure onto a cookie sheet lined with parchment paper. Spread mixture out and allow to cool. Drop on table to shatter or break however you feel like it. The baking soda helps the brittle to not be so rock hard - it isn't soft in any way... it is definitely hard like 'brittle' but a little easier on the teeth.

I forgot something really important. Take a peek midway through the last cook in the microwave. It won't hurt to stop and open the door for the peek. The mixture can burn and if it does -- it is ruined through and through. I have cooked during the last step for 1.5 minutes on some microwaves and it is just fine.
