Found one which sounds very good and could probably be easily adapted for veg or vegan.
Stuffed Tofu
2 cakes firm tofu cut into 3rds
1/3 lb minced beef (thinkin' diced eggplant and barley here)
2 green onions
1 carrot (well 1/2 a monster Asian carrot)
3 stone mushrooms (thinkin' button or 1 portabella)
5 dried shiitake
1 egg
(3 quail eggs, boiled and peeled)
1/2 tsp salt
tbsp chopped green onion
" chopped garlic
1/2 tbsp sesame salt
1/2 tbsp sesame oil
tbsp cornstarch
black pepper
bamboo or other steamer
cloth
Pat tofu dry and sprinkle each piece with salt, a little on all six sides. Heat your choice of cooking oil in a pan, about 1 tbsp (book doesn't say here, but don't use a lot). Fry the tofu til all sides are golden brown. remove from heat and set aside. Julienne, then dice veggies and mushrooms. Mix meat or other yummy filler with garlic, green onion,sesame salt, pepper and sesame. Halve the quail eggs. Mix the seasoned filler with the veggies, add and blend in the starch (it doesn't say, but maybe half?). Now, cut the tofu pieces like little bathtubs -hollowed out and ready to stuff, keeping the top edge you remove to replace later. Start stuffing, making sure a bit of quail egg gets into each one. Replace top piece. Roll each stuffed piece in starch then dip in egg (which you have mysteriously beaten and set aside in a convenient bowl, without being told by the recipe to do...) Place in steamer on cloth and steam for 15 minutes. Halve and serve face up.
Says nothing about dipping sauce, but has a picture of what looks like soy sauce in my book...(Practical Korean Cooking by Noh Chin-hwa)
