Chicken with rice, noodles, dumplings or stuffing

I need to make some comfort food. I put a chicken in the crockpot this morning and this evening I'll bone it out. I want to make a yummy dish with either rice, noodles, dumplings or stuffing. Something that can be heated or reheated later would be an added bonus.
