Herbie started a lively thread on ribs, so now that we're all hungry for what Herbie's having, let's share some recipes for completing the menu.
I'll start it off with our must-have with ribs or BBQ or any kind of cookout....
POTATO SALAD
red or yellow potatoes, 3 - 3 1/2 lbs.
eggs, boiled and chopped - 5
celery - chopped to a small dice - 1 C
Kosher baby dill pickles, chopped - 1 C
green onion with tops, chopped and saute'd in butter - 1 1/2 C
Kosher salt
Dressing
whisk together...
Mayo - 1 1/4 C
sour cream - 1/3 to 1/2 C
buttermilk - 3 T
Dijon mustard - 2 1/2 T
dry mustard - 2 tsp
cider vinegar - 2 T
dill - 1 1/2 T fresh or 1/2 T dry
cayenne pepper - 1/4 tsp
celery seed - 1 T
celery salt - 1/8 tsp
Kosher salt (easy on the salt...you're going to salt the potatoes before you dress them)
Seasoned Pepper to taste (McCormick's or Lowry's)
paprika and sprigs of dill for garnish
Peel potatoes and boil till tender. Drain and sprinkle with Kosher salt. Let potatoes dry a bit, then cube and place in large mixing bowl. Add eggs, celery, pickles and onion.
Add dressing and toss to coat well. Sprinkle with paprika and dill before serving. Serve cold or at room temp.
This recipe makes a very large amount...plenty for a large group and to have leftovers.
I spent many years tweaking this recipe, and this is its final form. My family voted unanimously that this is the ultimate version. It is very flavorful--not your usual deli offering.
