Fish Fillets

I've been trying to eat more fish. DH tries, but he is a red meat cook. He's handing me tough, leathery fillets. In the past, I've either battered and deep fried, or drenched in flour and pan fried in a half a pound of butter. I like it wrapped in foil and done in the oven but there has to be more options. Stove top ideas since our oven can only broil now :(

Anybody have any easy fish recipes using everyday ingredients? I can get 7 or 8 nice sized fillets for $10...enough for 7 or 8 nice meals ^_^
