Italian Sausage and Spinach Soup

Harford County, MD(Zone 6b)

I got this very simple recipe from the Campbells Kitchen Site. We just had it for lunch and it's very good.

Ingredients: vegetable cooking spray
1/2 lb. sweet Italian sausage sliced in 3/4" slices
4 cups Swanson's chicken broth
1/2 tsp. dried oregano leaves, crushed
1 med onion, (1/2 cup ) diced
1 med carrot, (1/2 cup) sliced
2 cups coarsely chopped fresh spinach leaves

Directions: Spray a 4 qt. saucepot with cooking spray. ( I just used a wee bit of olive oil ). Cook sausage until well browned.

Stir in the broth, oregano, onion and carrot. Heat mixture to a boil. Cover and reduce heat to low. Cook for 10 minutes or till vegetables are tender.

Stir in spinach and cook 1 minute more.

The only thing I did different was, as soon as the sausage was done I took it out of the pot and wiped the pot free of any grease. Added the sausage back along with the onions and carrots and let it cook a few minutes before adding the broth and oregano. I still cooked it for the 10 min though.
