Last semester, I had a couple of classes where health and nutrition were part of the homework and discussion. I was stunned when the instructor asked people to raise hands if they ate the 5 recommended servings of fruits and vegetables daily. No hands. No hands at 4, or 3. Just a few at 2 or 1. Incredible! These are young people (for the most part; I'm an exception!) and they have no idea about veggies - or fruit, either, it seems. So I'm on a mission. Here's what I'm trying to do and I'd love to have your ideas, suggestions, recipes, online sites - anything.
"10 Easy Ways to Eat 5 a Day" is what I'm calling my handout. The operative term is "easy" and following that is "fast". Most of my classmates work in addition to going to school and some have children, too. They aren't going to take the time that I - and most of you - do when it comes to preparing veggie dishes from scratch. So what would you do - or maybe do now - to shorten up prep time and get something nutritious on your plate?
