Cracker Candy (very good)

Payneville, KY(Zone 7a)

I had this on Christmas Eve and it was wonderful and easy to make:

Cracker Candy

40 saltine crackers
2 sticks butter (1/2 lb)
1 cup packed brown sugar
2 cups chocolate chips (butterscotch chips can be used)
1 cup chopped pecans (optional)

Preheat oven to 400. Place the crackers side by side on a foil lined cookie sheet. Combine the butter and brown sugar in a small saucepan; bring to a boil, stirring constantly. Cook for 3 minutes. Pour the mixture over the crackers. Bake for 5 minutes.

Remove from oven, sprinkle the chips over the baked crackers. Let stand for 5 minutes; spread the chocolate over the top. Sprinkle with nuts if desired.

Chill in refrigerator until firm.

Invert onto a flat surface; remove the foil. Break into pieces.

It tastes similar to toffee and is oh, so good.
