Bring on Your Black Eyed Peas Recipes, Pease

Whether it be your family's favorite Hoppin' Jon recipe or something totally different, could you please post your favorite tried & true Black Eyed Pea recipes? You don't even have to give exact measurements, just a description will suffice if you like.

I am particularly interested in ways to use my leftover ham with BEPs, but was wondering if anyone has a recipe which includes potato? I seem to recall a neighbor from my childhood who made a dish that included BEPs and large chunks of potato -- it was incredible, but I don't think I've ever found anything like it since then. I don't think that there was any tomato in it. Not sure if this helps or not, but her family heritage was Jamaican and Chinese; I'm just not sure if that was a family recipe or not... Regardless, I'm open for anything!
