It's going to be in the low 80s today and tomorrow. I still long for the North East Christmas of years ago, just not the cold and snow.

If I'd got on the plane I'd still be sitting in o'Hare Airport, Chicago!!
instead, I asked the airline for my money back.
my streps wont be overwatered because we are spending a quiet Christmas at home.
not a bad thing after all. At least I am a good cook. I am making braised pork chops with sauteed onions & apples with Calvados (apple brandy ) sauce. Dessert will be an orange meringue pie.

Hope everyone had a wonderful day yesterday! Makshi, LOVE that picture! How cute, a Winnie the Pooh & Friends Christmas tree! I used to decorate a Charlie Brown tree every year just outside my front door but haven't found the time in years! We didn't decorate at all this year, didn't even get up the outside lights but we've been in and out the past couple of weeks and just never found the time!

lin! ohmygod! I went lookingfor it & I lost it. I know I packed it for the trip!
After a moment of panic I remembered that I had cut it out of some magazine but I couldnt rememebr which one.
So I googled "orange coconut meringue pie recipe!
There it was! The first on the list. It is from Taste of Home & the author says she has won several ribbons with this recipe.
if you like lemon meringue, this is even better!
Just make sure you use fresh OJ & fresh zest! You can cheat on the lemon juice, but I had some in the freezer.
The only thing I do differently is to make the crust.
1 c flour 1/4 tsp salt 1 stick FROZEN butter 4 tBLS water.
Throw everything into a bowl (slice the butter first on a cutting board or you wont be able to work it.)
Using your hands quickly mix it intil you have a bowl of pea sized crumbs. squeeze it into a ball and refrigerate it for 15 minutes before rolling out.
prick some holes in the crust when you have it in the pan, and bake 16-18 minutes in a very hot oven-425! might want to check it at 16 minutes.
the filling is exactly the same as the recipe.
It doesnt last long!
Oh, Thank you Kivit! I love Lemon Meringue but really, really love anything orange! LOL, we drink ONLY FRESH O.J. down here! My backyard neighbor has many orange, grapefruit and lemon trees in her yard. She gave me two big bags of Tangerines and Grapefruit last week! Another good friend has Naval Orange trees and gives me oranges every year!
Thanks for the recipe for the crust! I'm going to write it down now and then I'm going to google the recipe for the filling! I love Taste of Home magazine .. used to subscribe and some of my favorite recipes the past few years have come from that magazine!
