Apple Puffed Pancake (aka "Dutch Baby")

I promised to post this after mentioning it and posting the picture on another forum. This is one of our favorite "special" breakfasts and great to have for guests. It is easily cut in half.
I sometimes make it with half eggs, half Egg Beaters or equivalent to cut down on fat and cholesterol. Very easy!

Apple Puffed Pancake
6 to 8 servings

6 eggs
1-1/2 cups milk
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup (1 stick) butter or margarine
2 large apples, peeled and thinly sliced
2 tablespoons brown sugar

Preheat oven to 425 degrees. In a food processor fitted with metal blade of a large bowl, combine eggs, milk, flour, sugar, vanilla,
salt and cinnamon. Process or whisk with a wire whisk until blended. If mixing by hand, the batter will be a little lumpy.

Place butter in a 12-inch fluted porcelain quiche dish or a 9-by-13-inch baking pan. Place in oven until butter melts. Add apple
slices and bake until butter sizzles (do not allow to brown).

Remove dish from oven. Pour in batter and sprinkle with brown sugar. Bake 20 minutes or until nicely browned and puffed. Serve
immediately.

Per serving: 335 cal, 19.5 g fat, 10.7 g saturated fat, 225 mg cholesterol, 368 mg sodium
