i make really good mac and cheese and thought i'd make a huge tray to go along with some other christmas eve foods--but i got this idea of putting in ricotta--was thinking it might be fluffier or lighter --does anyone have a good idea of how the ricotta would be with the cheddar type cheeses? and would it melt in a creamy way
