I am from a family where Christmas Eve is more the big deal for cooking, my mom always made (and still does, I just cannot travel to New York from Iowa most years at Christmas time) a variety of fish dishes. There would always be a few kinds fried (flounder, scallops, shrimp), a big pot of gumbo, something broiled, and usually my mom and I would split a lobster while my brother and dad like crab legs.
For the past two years, I've been trying to create my own Christmas Eve traditions with my husband. Honestly, I was also kind of bored with the same spread - fried, broiled, boiled. I like things with more UMPH! This year I plan on making the following (all recipes that I found on www.allrecipes.com):
Crawfish Dip - w/fresh raw veggies and crackers
Awesome Baked Sea Scallops
Buffalo Shrimp
The Way to a Man's Heart (haddock and crab casserole)
I'm making small versions of all of these, kind of like a tapas-style dinner, since it is just for hubby and myself.
Does anyone have any last minute special recipes they can share?
