Making Kefir

A long, convoluted path today took me finally to ordering kefir grains to make my own kefir. The journey started with Sally Fallon's lecture on Nourishing Traditional Diets. I really was blown away by the information she presented on grains... why they are bad for us IN THE FORM most of us use them (like bread and pasta). She also said “Mother Nature is smarter than the FDA”, which ties in with lots of food discussions on this forum.

The sidebar related video list showed one for kefir sourdough, so I went there because I like to bake bread and I like kefir... that led me to their website, then a bunch of links to other sources including Amazon where I put more books on my wish list... and finally to google a source for kefir grains... which are not a true "grain" at all, but a combination of bacteria and yeasts in a matrix of proteins, lipids, and sugars.

So, I'm going to make my own kefir. Having my own raw goat milk would be best, but pasteurized milk will work.

Anyone else?
