Christmas Goose????

Dover, PA(Zone 6b)

My son is hosting Christmas this year in his first home. He has a goose in the freezer from hunting this last fall and would like to serve it along with a ham. I know nothing about goose other than it is a dark meat. When he cleaned it instead of plucking it he skinned it and that could possibly make a difference in how to cook it. Does anyone have some suggestions on how to prepare this?
