Banana Coconut Cake
3/4 C shortening
1 1/2 C sugar
2 eggs
1 C mashed banana
1 tsp Vanilla flavor
2 C flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp salt
1/2 C buttermilk
1/2 C chopped pecans
1 C flaked coconut
Cream shortening, sugar and eggs together. Beat 2 mins. Add bananas and vanilla. Add dry ingredients and milk. Mix well. Add nuts.
Pour into 13x9 pan. Grease and flour well.
Sprinkle cake with coconut.
Bake 375 for 30 mins. Cover with foil the last 10 mins to prevent coconut from over browning.
FROSTING
1/2 C shortening
1/2 C butter
2 C powdered sugar
1/2 tsp vanilla flavor
1/2 tsp coconut flavor (do not substitute)
Pinch of salt
Mix on high for 5 mins or until fluffy.
Spread over cooled cake.
